3 Michelin Starred Mayo … from Alain Passard; the Indulgence of Real Food

Have you ever made your own mayonnaise? If I’d known it was this easy I would have tried it a long time ago! (At least it looks easy in the video). Watch as 3 Michelin star chef Alain Passard, owner of l’Arpege in Paris, as he whips up a mayonnaise in no time and serves it up with an assortment of delicious organic vegetables, a perfect summer dish. All it takes is a little mustard, olive oil and an egg yolk, who knew??

I was initially a little concerned about the raw egg yolk, but from the information I’ve been reading, salmonella is mainly a problem when chickens are raised in unsanitary conditions ie. factory farmed chickens, “but are extremely rare for small organic farms“. If you want to learn more about the safety of raw egg yolks, as well as their numerous health benefits there’s a lot of information online but could also check out the sources below.

Just a quick note, the video is in French, so if you need a little help with it, let us know, but if you know what the ingredients are you can pretty much see what to do. The salad that goes with the mayonnaise includes the white portion of green onions, shallots, zucchini yellow and green (but not the seeds), cucumber, garlic, carrot, radish, beets, chives, tarragon and salt & pepper. (Not really sure what the point of the egg yolk on top is though).
